'Chef Connie Cooks' Beef Empanadas
Makes 20 standard size empanadas or 40 miniature "bite-size"
INGREDIENTS:
1 –tablespoons olive oil
2 -pounds ground chuck beef
1/4 –cup Sofrito (recipe follows)
1 –14-15 ounce can chopped tomatoes
2 -tablespoons, sherry or sherry or red wine vinegar
1/4 -cup golden raisins (OPTIONAL)
1/3 –cup pitted (salad) olives, chopped,
and 2 tablespoons of the olive juice
Red pepper flakes (or cayenne pepper)
1 or 2 jalapeño (or red or green chilies) – optional for more heat!
20 empanada or 30 wonton wrappers, or homemade pastry dough (recipe follows)*
