Fig, Prosciutto, & Blue Cheese Squares

Ingredients:
2 tablespoons olive oil
2 garlic cloves, pressed
3 ounces thinly sliced prosciutto, chopped
1 (11-oz.) can refrigerated thin pizza crust dough
1 tablespoon chopped fresh rosemary
1/2 cup fig preserves (we tested with Braswell's)
3/4 cup crumbled blue cheese
1/2 teaspoon freshly ground pepper
Garnishes: fresh rosemary, figs

Instructions:
Preheat oven to 400°. Combine oil and garlic in a small microwave-safe bowl. Microwave at HIGH 20 seconds or just until warm. Let stand while prosciutto cooks.
Cook prosciutto in a large skillet over medium-high heat 11 minutes or until browned and crisp; remove prosciutto, and drain on paper towels.
Unroll dough, and place on a lightly greased large baking sheet. Press out dough with hands to form a 15 x 13" rectangle. Brush dough with garlic-flavored oil; sprinkle rosemary over dough. Spread fig preserves over dough; sprinkle with prosciutto, cheese, and pepper.
Bake at 400° for 15 minutes or until crust is browned and crisp. Let stand 5 minutes before cutting.
Make Ahead: Cook prosciutto up to 2 days ahead. Store in an airtight container in refrigerator until ready to assemble recipe.

Yield: 3 dozen
