Serves 4 to 6
1/4 cup olive oil
1 tbsp. lemon juice
1/4 tsp. salt
dash of tabasco sauce
1/4 tsp. ground black pepper
4 cups Watermelon balls or bite sized squares
½ cups crumbled Feta Cheese
½ cup coarsely chopped Kalamata olives (optional)
1/4 cup finely diced sweet onion
1/4 cup coarsely chopped Mint leaves
In a large bowl, whisk together the olive oil, lemon juice, salt, hot sauce and pepper until emulsified. Add the rest of the ingredients except the mint and gently toss to coat. Garnish with the mint and serve.
