Uncle Ben's: Ligurian Style Rice with Peas and Pesto

Ingredients
1 pouch UNCLE BEN'S ® READY WHOLE GRAIN MEDLEY™ Brown & Wild Rice
3 tbsp. extra-virgin olive oil
1 small red onion finely diced
1 large clove garlic, finely chopped
2 cups frozen peas
1/2 cup pesto
1/3 cup grated Parmigiano

Instructions
1. Heat a medium skillet over medium high heat.

2. Add extra-virgin olive oil, onion and garlic and sauté, stirring constantly for 2 to 3 minutes.

3. Add the peas seasoned with salt and pepper, contents of UNCLE BEN'S® READY WHOLE GRAIN MEDLEY™ Brown & Wild Rice pouch, cover pan with tight fitting lid and continue to heat 3 minutes.
4. Remove from heat and let stand 3 minutes. Remove lid and stir in pesto.

5. Replace lid and allow to stand 1 minute. Remove lid, sprinkle with cheese and serve immediately.
