Tilapia with Escabeche Sauce

Marinade Tilapia fillets in citrus juice and spices or use your favorite mojo sauce
Brush a garlic-butter mix on a piece of foil
Place the fish in the foil and brush more of the garlic-butter mix
Close the foil and place on the grill
Cook until tender

For the escabeche sauce, heat a sauce pan with olive oil and sautee onions and garlic
Add carrots, red and green peppers and sautee some more
Add olives and capers and continue to sautee
Add just a splash of vinegar to finish it

Top the Tilapia with the escabeche sauce
