SPICY AND CHEESY GUACAMOLE
Serves 6 to 8
2 to 3 med. Avocados, diced
1 med. Tomato, seeded and diced
½ cup minced red onion
½ cup minced cilantro
2 Chipotle peppers, seeded and minced
3 tbsp. Lime juice
Salt to taste
1 cup shredded melting cheese like Monterey Jack
Tortilla chips warmed in the oven
1. Combine the first 6 ingredients in a medium bowl and season with salt to taste. Warm the tortilla chips in a slow oven for 5 minutes just prior to serving.
2. Melt the cheese in a double boiler or microwave and pour over the Guacamole. Serve immediately with the warm tortilla chips.
