Ingredients:
2 ¼ cups granulated sugar
1 cup light corn syrup
1 cup water
2 cups sunflower seed
1 tsp salt
¼ tsp cayenne pepper
2 Tbsp butter
2 tsp baking soda
Method:
· Please sugar, water and syrup in medium sauce pan. Heat until sugar dissolves to medium heat (soft crack 235 degrees)
· Add salt, sunflower seeds to softball stage (250 degrees)
· Cook to hard crack stage (290 degrees), stirring often
· Remove from heat, quickly stir in butter , baking soda, cayenne pepper, beat to a froth 5 seconds
· Pour on sheet tray for desired thickness (we want thin)
Chef note:
Try a single batch with ¼ tea spoon cayenne pepper with water .A great brittle also.
