*Makes 4 servings
·4 cups dashi soup stock (see below)
·1 cup water
·4 tbsps miso paste
·1/8 c chopped green onion
·1 block tofu cut into small cubes
·1 Tbls dried wakame
Put dashi soup stock and water in a pan and bring to a boil. Stir in miso to dissolve. Stir the soup gently. Stop the heat and add chopped green onion, tofu and wakame. Serve hot
Dashi soup stock *Makes 4 cups
·4 cups of water
·1 piece kombu (dried kelp) about 8" long
·½ tsp dashi powder
Wipe the kombu but don't wash. Put water in a deep pot and soak the kombu for about 20 minutes. Put on low heat. Just before the water comes to a boil, remove the kombu and add the dashi powder. Do not boil. It is now ready to use
