Start with 6-7 oz grouper fillet
Season with (maldon) sea salt and fresh black pepper
Sear in non stick pan with ½ tsp. grape seed oil over medium high heat
Place pan in 350 degree oven 10 to 12 minutes (do not turn grouper leave on seared side)
Always sear the better looking side as that is what you show
Blanch vegetables (organic/seasonal/favorite) until tender
Shock vegetables in ice water then drain
When ready to serve quickly sauté in ¼ tsp grape seed oil and 1 oz vegetable stock and heat throughout
Place seared grouper over seasonal organic vegetables seared side up
