Chef John's Cafe Chili

1 large green pepper, diced
1 large yellow onion, diced
1 tbsp. minced garlic
1 lb. pork sausage, spicy or mild to taste
2 lb. ground meat
1 28 oz. can crushed tomatoes
1 15 oz. can tomato sauce
2 cups water
1 15 oz. can black beans
1 15 oz. can chili beans
1 15 oz. can pinto beans
1 tbsp. cocoa powder
1 tbsp. ground cumin
3 to 4 tbsp. good quality chili powder
1 tsp. ground cinnamon
salt and pepper to taste

1. Brown the peppers, onions, garlic, sausage and ground meat in a large stock pot until meat is no longer pink.

2. Add all the rest of the ingredients except salt and pepper and bring to a boil. Reduce the heat and simmer 30 to 45 minutes.

3. Season and adjust the spices as needed and serve. Supply garnish of chopped red onions, sour cream and shredded cheddar cheese.
