Makes a great main dish

8 ounces uncooked penne pasta
¼ cup butter
½ medium-size sweet onion, chopped
½ (16-oz.) loaf mild Mexican-style pasteurized prepared cheese product, cubed
1 (8-oz.) container sour cream
1 (14-oz.) can diced tomatoes and green chiles, drained ,p>
1. Prepare pasta according to package directions.
2. Melt butter in a large skillet over medium heat; add onion, and sauté 3 to 5 minutes or until tender. Add cheese, and cook, stirring constantly, 5 minutes or until cheese melts. Stir in sour cream, stirring until well blended. Stir in tomatoes and green chiles and pasta; cook, stirring constantly, 5 minutes or until thoroughly heated. Note: We tested with Velveeta Mexican Mild cheese product.
Yield: Makes 6 servings
